The indoor dining room at Alchemy is neat and sophisticated with a floor to ceiling wine cellar on entrance, green and bronze décor and silverware on all tables thoughtfully positioned to face the sweeping views.

While the hatted restaurant allows diners to order from the a la carte menu, the six-course degustation showcases the talent of co-owner and Chef Brad Jolly, one of the country’s most influential chefs.

Each carefully created course, and palate cleanser, elicits redefined flavours and terrific textures, generating an elixir between the food and the diner as defined by the restaurant name. Once more, many elements of the degustation employs the use of liquid nitrogen for a unique tasting experience.

Before commencing the degustation, Jolly welcomes diners with a creamy tomato based prelude that kicks the appetite into full swing.

Showcasing fine seafood from Australian waters, the South Australian Yellow Fin Tuna complimented with a divine glass of the 2009 Ailandale Semillon from the Hunter Valley and the Hervey Bay Scallops are fresh and delicate courses with mouthwatering flavours.

However the Tasmanian Ocean Trout with Smoked Apple, Miso Eggplant and Spiced Kim Chi boasts flawless techniques from food preparation to presentation.

Matched with a drop of 2010 Grenache from McLaren Vale, this course highlights the best of the country’s local produce, fused with a contemporary take on traditional Korean, Japanese and Chinese fermented vegetable and soybean dishes.

After consuming the final palate cleanser and dessert course, diners are invited to top the experience off with a personal liquid nitrogen experience, demonstrated by one of Alchemy’s chefs. The experience explores sweet gastronomic nibbles and is a major coo at the restaurant.

Note: In conjunction with Brisbane Marketing, Alchemy are celebrating Brisbane’s international-standard cuisine and local produce as Brisbane hosts the 2014 G20. From 1 to 30 November, Alchemy are offering a seasonal six course Queensland produce inspired degustation with optional wine pairing.
