Ordered by the glass, the NV Monmousseau Brut ‘Etoile’ Chenin Blanc is a versatile white-wine grape variety that has been cultivated in the Loire Valley in France. It is a light and fresh everyday wine that compliments the Pan Seared Hervey Bay Scallops on the entrée menu.
This dish is fresh and unique, superbly plated with vanilla and artichoke barigoule and a celery puree.
Complimented with a glass of fragrant A Mano IGT Fiano Greco, the Market Fish made by the classically French trained chef is superb.
Sitting on a bed of Moreton Bay bug ravioli with a side of cooked zucchini spaghetti, French origin tarragon bisque and garnished with mandarin crumble, this main meal brings together the contemporary and traditional fusion that represents Malt Dining.
However the Sous Vide Lamb Rump illustrates creativity with inspired flavours like the beetroot puree and distinctive presentation such as polenta stuffed pequillos.
